The eight-treasure rice of Jingzhou

The eight-treasure rice of Jingzhou, one standing out of its type in China,originates from a court chef who later opened his own restaurant in Jingzhou inthe time of Qing Dynasty. Although onehundred years has passed, the original court flavor of the eight-treasure ricehas been maintained the same, winning its name of "Eight-treasure Rice ofCourt Flavor". To make this dish, red dates, lotus seeds, pearl barley,longan, cherry, sugared winter-melon slices, sugared osmanthus and sticky riceneed to be cooked and mixed together to shape into pieces, and then sugar andpork fat will be added to fry the pieces. So it is also called stir-friedeight-treasure rice. Once putting the rice pieces into your mouth, you can feelit melt easily, with the flavor and sweet taste sinking deep into your tastebuds. The fat and sugar taste will lure you to take more pieces. So people saythat “after you leave the table, you can't help recalling the taste from timeto time”.
