Songzi Buckwheat Bean Pieces is a traditionalhandmade specialty originated from Wangjiaqiao Town (former Mashui Village) inSongzi. It is mainly made from buckwheat, rice, potatoesand green beans. The traditional way to makethe dish is: soak buckwheat and rice in water, smash them into paste, andproportionally add potato and green bean powder. Stir them together, and drythe paste in a hot wok in thin pieces. After the pieces cool down, cut theminto straps and dry them in the open air.
